To die for cucumber salsa, quick, easy and delicious =)


Just a simple, quick salsa I threw together with what I had on hand, it only took about 3 minutes. You could also use a food processor, I tend to get carried away with mine though, and I like my salsa pretty chunky so I just cut it all up by hand.

  • 1 large tomato
  • 1 large cucumber
  • 1 jalapeno 
  • 1 garlic clove
  • 1/4 of an onion
  • A few sprigs of cilantro
  • salt & pepper to taste
Dice tomato, peel cucumber and dice it also. Remove stem and seeds from jalapeno, dice it and add it to bowl with tomato and cucumber. Do the same with onion, cilantro and garlic. Add salt and pepper to taste. Mix together well, keep refrigerated until time to serve. Makes approx. 1 1/2 cups of salsa.

We had this on our burritos that consisted of brown rice, black beans, grilled chicken breasts, and a bit of shredded cheddar wrapped up in whole wheat tortillas. It was awesome!
